Le nostre radici affondano in Salento dove con Artisti Macellai abbiamo iniziato a sperimentare con verdure, frutta, dolci, tutto passato sul fuoco e trasformato.
Da quella scintilla è nato un percorso di ricerca continua, fino a Milano, dove con Losko abbiamo voluto portare la cucina di brace al suo massimo: qui il fuoco non è solo tecnica, ma atmosfera e visione: un’esperienza che accende emozioni.
